Lunchbox Challenge

because PB&J can get really old . . . .

I'm packing two lunches for school this year and am already running out of ideas for things to feed my hungry kids.

There's got to be something else besides PB&J, ham and cheese, and soup in a Thermos!

My problem is my son leaves for school at 7, and does not eat until 1.. and likes to take lunch in a throw away sack (middle school) so he eats mostly PBandJ or PB and Banana sandwhiches.. sometimes if we have left over pizza I will pack him that!

I'll sneak wheat germ into anything that calls for flour- cookies, bread, pizza dough, you name it. Just use 1/3 cup less flour and put in 1/3 cup wheat germ instead.

Awesome Robin! My kids totally love sausage and wheat germ in the pancakes! smart. I've put it in cookies but didn't think about pancakes!

A variation on Farmer's Wife's hot dog lunch: Sometimes I'll roll a sausage up in a whole wheat pancake and pack that up with fruit and yogurt on the side. I make the pancakes with wheat germ and whole wheat flour, so they're decently healthy, and the kids feel like they're getting away with something because they got breakfast for lunch.

I buy the sausage from the butcher shop so they're not packed with preservatives, but that means they need to be eaten up quickly!

A new idea for lunches. I despise hot dogs because they are full of *crap*. But, I do shop for the turkey and low fat and beef dogs. The generics often have a much healthier dog than the name brand.

"Lunchables" makes those hot dog lunches (read the nutritional facts though and YIKES!). So, Little Gal want them. I have started cooking dogs ahead of time and then I roll them up in bread and send off with a yogurt or apple sauce, flavored water, and pretzels or something.

The kids love it! They feel like they are getting the same as some of the other kids. And, I feel like I'm feeding them something worthy of their bodies.

Israeli kids take breakfast, not lunch, but it's similar in that they usually bring sandwiches. My son loves a pita with hummus, salami or pb&j (very out there for Israelis LOL). He also takes a little container of either a cutup veg (usually cucumbers but sometimes carrots. Tomatoes are too messy) or fruit each day.

We have a laptop lunch and have used it for three years. Having the little tubs to fill really inspires me. Today was breakfast for lunch. Sausage patty cut in small bite size pieces, two waffles cut into dipping sticks, a small container of syrup, a hard boiled egg in a cute egg mold, and cantaloupe.

I pack a lunch and tea for Peaches four times a week. Usually she gets a ham and cheese sarnie and spaghetti bolognaise (with sweetcorn, carrots or courgette). Two yoghurts and some fruit (yes, peaches) for her desserts. What a rut. I've got limited time to prepare meals and spag bol freezes so easily...

I want Allies lunch! I love Tuna and edamame! We just try and keep things creative, like using a tortilla instead of bread. We also do chunks of meat and cheese instead of a sandwich. With a thermos, really anything goes; rice, quinoa, left over Chinese.

Yesterday Allie took Edamame and Tuna Sashimi for lunch. . .:-)! Yes, I'm serious. . .Sometimes she takes bagels w/ cream cheese. Sometimes we get peanut butter from PB Loco (like cin raisin) and she takes a container of that w/ pretzels to dip in it. . .sometimes she takes cut up pieces of salami and some cheese. . .mac & cheese in a thermos. ..
